YUM. Left over corn salad from last night and veggie-packed quesadillas for dinner. They didn’t involve a lot of prep work and smelled so good that they went from plate to mouth almost immediately… therefore, no pictures. Peppers, mushrooms, tomatoes, green onions and LOTS of cheese stuffed between tortillas. Guacamole, sour cream and taco sauce loaded on top. A great dinner to ease into the week while I consider my menu for the new few nights…
So since I have no food pictures or a recipe to post, I thought I’d post some snapshots of puppy, aka Griffy. (I’m a bit obsessed).
